Egyptian Eid cookies (Kahk) traditional recipe and the significance of Kahk seasoning.
Egyptian Eid cookies or Kahk are the most popular cookies in Egypt. Kahk is usually served on feasts and celeberations such as Eid Al Fitr and in wedding ceremonies. It is traditional that the Egyptian bride gifts Kahk to her relatives and groom's relatives after the wedding ceremony. Kahk may be plain and soft or may be filled with Turkish delight (Malban), or sticky sweet date paste (Agwa), or Agameya (mixture of ghee, honey, sesame seeds or optional nuts) and it is mostly decorated with powdered sugar.
Kahk is believed to date back in Egypt to the Tolonic periods. Kahk was made in (eat & thank) carved templates and sometimes Kahk was filled with gold.
Kahk has a delicate texture that melts in your mouth. However, Kahk is heavy and non healthy and this why this genius mixture of Kahk seasoning has made. Beside it gives Kahk its fabulous flavor, Kahk seasoning helps in Kahk digestion and absorption by increasing secretion of digestion enzymes from stomach and intestine. Kahk seasoning is available in all Egypt's food stores and groceries. If it is not available in your country, you can prepare it by mixing the following seasonings together (1/2 tablespoon carnation powder, ½ tablespoon cardamom powder, ½ tablespoon cubeb powder, pinch of cinnamon, 1 tablespoon Mahaleb cherry powder, 1 tablespoon sumac powder).
Kahk has a reputation for being difficult to make. At this blog I am giving you an easy detailed recipe of soft plain Kahk. This recipe was successful with me from the first time. Don't be afraid that you are still a beginner, I was the same like you. Try the recipe and enjoy this delicious cookies with your favorite cup of tea.
Let's start with the ingredients:
The ingredients should be accurate to have a successful recipe.
• 250 gm pure ghee. • 400 gm pastry flour. • 80 gm cornstarch. • Pinch of salt. • 1 tablespoon Kahk seasoning. If it is not available in your country, just mix the following to make it (1/2 tablespoon carnation powder, ½ tablespoon cardamom powder, ½ tablespoon cubeb powder, pinch of cinnamon, 1 tablespoon Mahaleb cherry powder, 1 tablespoon sumac powder) or you can skip it. • 2 tablespoons sesame. • 1 teaspoon yeast. • 1 teaspoon sugar. • 4 tablespoons tepid water (Don’t add too much water if you want it soft). • Powdered sugar for decoration.
Then we will go to preparation steps;
• In a deep plate, add yeast to water and sugar then cover them. • Melt the ghee until it starts to bubble and be very hot “don’t let it burn”. • In a large mixing bowl “that can take the heat”, add the flour, cornstarch and salt mixture. • At the middle of the bowl, add Kahk seasoning then sesame. Start by pouring the hot ghee over sesame “at the middle of the bowl” little by little until sesame is crispy brown and you fell the Kahk smell. • Stir the mixture with a spoon until the mixture is homogenous then add the yeast, water, sugar mixture and stir again. • When you can tolerate the dough’s temperature, start kneading for 10 min or until soft dough achieved “it needs strong kneading”. • Preheat the oven over 190-200°c. • Roll the dough into balls then press down slightly to be flattened. • Carve the balls surface using Kahk tweezers, printers or fork if you don’t have one “the carving is to hold sugar powder over the surface”. Look at the picture below.
• Place Kahk balls in a nonstick sheet. • Put the sheet in the oven for 15-20 min or until the surface is gold. • Spread sugar powder over Kahk on serving and enjoy.
