Egyptian lentil veggie soup with vermicelli.
Lentil soup is one of the most popular vegetarian dish in Egypt. It is one of the main dishes that is served in Egyptian's tables especially low-income Egyptians.
Lentil soup is popular across the world, but each country has its unique way of preparation. Egyptian lentil soup is so nutritious as it made of lentils, carrot, tomato and onion. Also Egyptian lentil soup has a unique taste due to its special garlic sauce.
Egyptian lentil soup is very easy to make and takes no time, let's do it;
Ingredients:
½ cup red lentils “washed”.
1 medium carrot, cut into thin slices.
1 medium tomato, cut in half.
1 medium chopped onion.
2 garlic, peeled.
2 garlic, peeled and minced.
3 tablespoon vermicelli.
½ tablespoon salt, or for taste.
½ tablespoon cumin.
3 cups water.
Preparation:
In a deep pan, add lentils, carrot, tomato, chopped onion, peeled garlic and water then cook over medium high heat for 10-15 min.
Let the mixture cool down then mix it in the blender until it is homogenous.
In a deep pan, add 2 tablespoon oil and vermicelli and cook over medium high heat until vermicelli is crispy brown, then add the mixture, salt and cumin and cook over low heat. “If the mixture is thick, you can add more water”.
In another pan, add 1 tablespoon oil and minced garlic over medium high heat. Once you feel the garlic smell, add the garlic with oil to the lentil soup then stir and serve it.
