Lancashire biscuits are buttery delicious biscuits filled with jam or chocolate sauce. Lancashire biscuit is originated in UK. It is thought that is passed to Egypt during the occupation period. Lancashire biscuits are made with other delicious Eid cookies such as Petit-four and Melt-in-mouth cookies "Ghorayeba".
Lancashire biscuits recipe is easy and fast. Let's do it;
Ingredients:
1/2 cup ghee.
1/3 cup sugar confections.
1/3 cup corn starch.
1 egg.
1 cup flour.
1/2 teaspoon baking powder.
Dash of vanilla.
Jam, chocolate sauce or nutella for filling.
Preparation:
In a mixing bowl, mix ghee with sugar and stir until it is creamy.
Add egg and vanilla and whisk them together.
Add flour, corn starch and baking powder then knead until the dough hold itself.
Form small balls and put them in a non stick sheet.
Preheat oven over 180-200 C.
Bake the cookies for 13 minutes.
Stick every two cookies together with jam or chocolate and enjoy.
