A mouthwatering apricot paste "Ammer El Din" pudding recipe.

Apricot paste budding is a popular Ramadan dessert. Apricot paste is added to dates, dried fruits and water to make a special Ramadan starter drink. Ammer El Din is named after a Syrian city called Amr El Din. Syria is popular of apricot paste manufacture.

Apricot paste is available in Middle Eastern stores in Ramadan or you can make it by yourself. Apricot paste pudding is my favorite pudding. It has a unique taste that you can't find in any other dessert.

The recipe is so simple and easy;

Ingredients:

• 500 gm apricot paste. • 1 liter water. • 5 tablespoon cornstarch. • 4-5 tablespoon sugar or for taste. • Shredded coconut, raisin, minced peanuts or pistachio for decoration.

Preparation:

• Cut apricot paste into small pieces. • Add cornstarch to 1 cup water and stir until the mixture is homogenous. • In a deep pan, add apricot pieces to 1 liter water and cook over medium high heat and stir until full melting. • Add sugar to apricot then stir until sugar melting. • Pour the cornstarch mixture little by little with stirring until it thickens. • Pour the budding in small deep plates, then add shredded coconut, raisin and minced peanuts or pistachio on surface.
