Egyptian cooked Hummus; a new unique vegetarian dish.
As I told you before, vegetarian recipes of Egyptian cuisine are endless and variable. Egyptian cuisine depends mainly on vegetables and legumes through ages as it far less expensive than meat and the variety of vegetables grown on Nile sides.
Egyptian cooked Hummus is a unique tasty dish. It is light and so nutritious. I am not a vegetarian, but I really miss this dish from time to time. The genius amazing tomato sauce that is used in many Egyptian stew dishes makes Hummus the best vegetarian dish from my point of view.
The recipe is so simple and easy. Let's do it!
Cooking time: 25 min.
Ingredients: • 250 gm split chickpeas (soaked in water for 2 hr.). • 3 tomatoes. • 1 pepper. • 1 small chopped onion. • 1 clove garlic, peeled and diced. • ½ teaspoon salt or for taste. • ½ teaspoon ginger. • ½ teaspoon cumin. • ½ teaspoon black pepper. • ½ teaspoon allspice. • 2 cup of water. • 1 teaspoon ghee or butter.
Preparation: • In a deep pan, add the ghee and chopped onion then cook over medium high heat. • When onion is yellow in color, add the diced garlic. When you feel the garlic smell, add the split chickpeas, water, salt, allspice, pepper, cumin and ginger then cook for 10 min • Mix the tomato and pepper in the blender to make the tomato puree. • Pour the tomato puree over the cooked split chickpeas and cook for 10 min or until it thickens. • Put the cooked split chickpeas in a casserole or oven pan and put it under the oven’s grill for 5 min. If you aren’t vegetarian, you can hatch 4 eggs over the surface just before putting it in the oven. It is usually served with pita bread.
