Tips to make a perfect chicken or meat broth.
As Egyptian cuisine depends mainly on stews, chicken or meat broth are essential for successful stew recipes. Also, chicken broth alone is considered a perfect dish. My favorite meal is boiled chicken, chicken broth, rice, salad and fried potatoes, this an amazing simple meal.
There are 5 tips you should follow for a successful chicken or meat broth;
1- "For chicken only" remove chicken skin, some chickens are very fatty which makes the broth greasy and non tasty. Removing chicken's skin makes it light and tasty.
2-Cut chicken into 4 pieces and meat into small pieces; this increases the exposure of the bone and meat to the broth and gives it more flavor.
3- Use a small cooking pot, using a small pan makes the broth more concentrated. You should use a pot appropriate to the size of chicken and just cover them with water.
4-Add vegetables, for broth add 1 small peeled onion, 1 peeled garlic, 1 green bell pepper, 1 small tomato cut in half. When tomato is cut in half, its juice blend with the soup giving amazing flavor.
5- Seasoning; seasoning is important for a savory broth. Add to the broth 1/2 tablespoon salt, 1/2 teaspoon black pepper, 1 teaspoon ginger, 1 teaspoon cinnamon, 1 teaspoon allspice and 1/2 teaspoon cumin. This a perfect seasoning for any broth.
On serving, just add 1 small lemon juice and enjoy a light tasty broth.
