Besara with caramelized onion; a delicious vegetarian dish made of split fava beans.
Besara is a traditional Egyptian dish that belongs to lentil soup, Koshari and foul medames category. Besara is nutritious as it consists of split fava beans that is reach in protein, coriander, parsley, onion and peppermint which are rich in fiber and vitamins. Besara is decorated with crunchy caramelized onion which makes it very delicious.
Fortunately, it is very easy to make and takes no time. Let's do it;
Ingredients:
For Besara:
1 cup split fava beans.
¼ cup chopped fresh coriander.
¼ cup chopped fresh parsley.
1 onion cut in quarter.
¼ teaspoon dried peppermint.
½ teaspoon salt or for taste.
½ teaspoon cumin.
½ teaspoon black pepper.
½ teaspoon dried coriander.
4 cups water.
For caramelized onion:
1 small onion cut in slices.
1 tablespoon flour.
Oil.
Preparation:
For Besara:
In a deep pan, add all Besara ingredients and cook them over medium high heat for 15 min, then let them cool down.
Put the cooked ingredients in the blender and mix them together until they are very soft.
Bring it to a boil for 1 min.
For caramelized onion:
Powder onion slices with flour.
In a frying pan, add oil and when it is hot add onion slices.
When onion is brown in color, strain them from oil and put them over Besara.
