Egyptian macaroni casserole is a popular Egyptian dish that is served mainly in folk restaurants. It may be made of ground beef, chicken or sausage.
Egyptian macaroni casserole is perfect for your busy days. It is an easy fast dish. Let's do it;
Ingredients (makes 2 small casseroles):
400 gm penne pasta.
500 gm ground beef.
4 cups tomato puree.
1 chopped onion.
1 chopped tomato.
1 chopped green bell pepper.
2 garlic, peeled and minced.
Salt, black pepper.
½ teaspoon ginger.
½ teaspoon allspice.
Oil.
Preparation:
In a pan, add 2 tablespoon oil and chopped onion, then cook over medium high heat until onion is yellow.
Add ground beef and stir until the color of beef changes.
Add chopped tomato and pepper, ½ tablespoon salt, ½ teaspoon pepper, ginger, allspice and cook over low heat for 10 min.
In a deep pan, add 1 tablespoon oil to minced garlic over medium high heat. When you feel the smell of garlic add tomato puree, then add 1/3 tablespoon salt, ½ teaspoon pepper, and cook for 1 min.
Grease a casserole with small amount of oil from bottom and sides, then add a layer of ground beef, then add penne pasta.
Pour tomato puree over pasta. (Tomato puree should be thin to allow pasta be fully cooked. If your puree is thick dilute it with hot water).
Cover the casserole with a layer of parchment paper, then a layer of foil paper.
Put the casserole in the oven over 220°c for 1 hr.
On serving, let the casserole cool down, then loose pasta from casserole with a knife “like a cake”, then turn over the casserole and enjoy.
