Zucchini stew or Kosa; a veg and non veg recipe.
Egyptian cuisine is popular with large variety of vegetable stews. One of those is zucchini stew or Kosa. Kosa also is one of food expressions that Egyptians use to express out themselves. Kosa mainly refers to favoritism or when someone uses connection to get a grade or a position. At these situations, you will find Egyptians saying " It is zucchini or Kosa".
Kosa is an easy delicious dish. It is a veg and non-veg dish as broth could be replaced with seasoned water with no much difference in taste. Let's do it;
Ingredients:
4-5 small zucchini.
2 cups of seasoned broth or seasoned water for veg.
2 cups of tomato puree.
1 green bell pepper, chopped.
1 chopped onion.
1/3 tablespoon salt.
1 teaspoon cumin.
1 teaspoon black pepper.
2 tablespoon vegetable oil.
Preparation:
Cut zucchini into thin slices.
In a deep pan, add vegetable oil and chopped onion and cook over medium high heat until onion is yellow. Add tomato puree and cook for 1 min.
In an oven pan, add zucchini slices, chopped pepper, tomato sauce, broth or water then all seasoning and cook over medium high heat for 5 min then cook over low heat for 20 min or until fully cooked.
It is served with rice.
