Keshk; a traditional creamy chicken soup with caramelized onion.
Keshk is a popular Egyptian dish particularly in upper Egypt. In rural villages in upper Egypt, it is served with tea like cakes in cities.
Keshk has a special amazing taste. The mixture of yogurt, flour and chicken broth is really divine. Keshk is prepared with three different ways. In this blog I am giving you the traditional recipe of keshk. In upper Egypt, they add tomato sauce, however in Alexandria they use shrimp's soup instead of chicken broth.
Kesh is easy and simple, let's do it;
Ingredients:
4 cups chicken broth “salted and seasoned”.
½ cup milk.
170 gm yogurt.
Flour.
1 small onion cut in slices.
1 tablespoon ghee or butter.
Salt for taste.
½ teaspoon pepper.
Preparation:
In a deep plate, add yogurt then at the same yogurt cup, add the same amount of flour then mix them together with a spoon until they are homogenous and soft, then leave them for 1 hr. “this is called keshk’s yeast”.
Powder onion slices with 1 teaspoon flour.
In a deep pan, add ghee over medium high heat until melting then add onion.
Strain onion when it is gold in color.
At the same pan, add chicken broth, cold milk, yogurt flour mixture, pepper and salt and stir until favorable thickness achieved.
On serving, add caramelized onion over surface.
